The vines are bush pruned and worked by hand. The two are picked separately as Albillo Real is very early to ripen. The varieties are vinified separately. The grapes and de stememed and macerated on their skins for 20 days. The varieties then ferment naturally in stainless steel. The two varieties are then blended and some of the wine ages for 5
