2023 Domaine Bachelet-Monnot Chassagne-Montrachet, Burgundy, France Kongsgaard and aged for two yearsSourced from 30+ yearold Chardonnay vines across seven to eight plots in Chassagne, some adjacent to premier cru sites. Organically farmed, grapes are handharvested and undergo a long, slow press, then spontaneously fermented in 350 L barrels. Aged 12 months in barrel (with ~25 % new oak) before spending another 6 months on lees in stainless steel.
