2023 Henri Chauvet En Attendant La Pluie, Vin de France Flor Del Desierto Montagne de Reims100% Pinot Noir Origin: Savigny ls Beaune (Burgundy); organically farmed fruit from a highly regarded grower (also sells grapes to Bastian Wolber). Vinification: 1012 days whole cluster maceration; part in a large wooden tronconic vat, part in stainless steel. Cap management by bucket wettings only (remontages au seau). levage: 9 months in old 228 L barrels, then 9 months in bottle. Additions Finishing: Native yeast (no inoculation). Unfined.
